TASTING NOTES

Pale straw-yellow colour, with golden hues and a slow-evolving, very fine, and persistent mousse. A clean and crisp bouquet reminiscent of hazelnuts, fresh citrus, and ripe white fruits – pear and yellow apple - with notes of lightly buttered toast, vanilla spice, and truffle. Very elegant and delicate with a lingering, clean finish. Recommended serving temperature - 7-8 degrees celsius.

Created in 1979 by Agustí Torelló Mata. This unique Cava has been described by Michel Bettane, an influential wine critic in France, as a sparkling wine comparable to the very best champagnes: “Wonderful and delicate walnut aromas, refined texture and bubbles, very seducing finish. The perfection of Cava or almost, and a wine that shall surprise many people.” He included Kripta in his book of “The Best 100 Wines of the World” along with 4 other sparkling wines (all Champagne).

The label and logo was designed by Rafael Bartolozzi. The bottle is amphora-shaped, and produced by hand. Each bottle comes in a special box - perfect for gift-giving. 

Kripta is a coupage of three traditional Cava white grape varieties, all organically grown and hand-harvested from three unique plots in the Penedès. The Macabeo (45%) is from the Vicari vineyard in Sant Pau d'Ordal (planted in 1962); the Xarel-lo (20%) is from the Mercader vineyard in Sant Sadurni d'Anoia (planted in 1974); and, the Parellada (35%) is from the Lola vineyard in Sant Joan de Mediona (planted in 1969).

Following the traditional method of making sparkling wine (like champagne) the second fermentation takes place in the amphora-shaped bottle, with a natural cork,  over a period of at least eight years, approximately the same amount of time as some of champagne’s great marques. Bottles are individually numbered - with the date of disgorgement shown on a card inside the box. Approximately 36,000 bottles produced in this vintage.

In the heart of the Penedes, near the town of Sant Sadurni d’Anoia, Agustí Torelló Mata produces a range of high quality Cava, perhaps most notably for Kripta, unique for its extended ageing and handmade amphora shaped bottle. 

Agustí Torelló Mata is family owned and run. Their primary focus is Cava and its products are highly regarded by some of Spain’s most famous restaurants. 

There has been a movement recently in Spain to use the more fashionable higher producing grapes like the chardonnay and pinot noir in the Cava blend. Agustí Torelló stands firmly with tradition and flavour, by using only Macabeo, Xarel-lo, Perellada, and Trepat (for the Cava rosé)The production of Agusti Torello Mata is very limited due, among other things, to the age of their vines.
