Agustí Torelló Mata - Cava, Spain (2018)
Tasting Note: Pale straw colour, with very fine bubbles that evolve slowly in the glass. Aromas and flavours of green apple, tangerine and nectarine with a subtle leesy notes. Balanced and rich, with a smooth and elegant finish.
Made from a blend of 36% Macabeo, 28% Xarel-lo, and 37% Parellada grapes, hand-picked from ~35 year old certified organic vineyards in the area of Sant Sadurní d'Anoia.
Each variety is vinified separately, using indigenous yeasts. Second fermentation took place in the bottle, in underground cellars, with a minimum of 36 months aging on the lees. Bottles are disgorged individually, and only when required for market (2 -3 weeks supply) to ensure optimum condition of the finished wine.
Bottled (Brut) with approximately 6.0g/L residual sugar. Alcohol 11.5%/vol. Certified organic and vegan.
About the 2018 Vintage: It was a year marked with considerable rain (3 times the previous vintage), which translated into a higher yields. The high temperatures resulted in good balance, with less acidity, resulting in a higher percentage of Parellada in the blend (which comes from higher elevation vineyards).
