The Salamino grapes are hand-picked from the end of September to early October; they undergo cryomaceration for 5 days, soft pressing, the fermentation takes place, using the long Charmat Method at a controlled temperature of 14/16°C for 4 weeks.
Located in San Lorenzo in the heart of the Modena countryside, Zucchi began in the 1950s when Zucchi Bruno started working and turning the grapes of his own vineyard located in the prestigious area of Lambrusco di Sorbara DOC. Since 2010, Silvia (Bruno's grand-daughter), a graduate in Oenology at the ancient and renowned School of Oenology of Conegliano is the head winemaker.
