TASTING NOTES
A wild fermented Cab Franc rosé that is an excellent expression of Niagara terroir. A bit Tavel-esque. The aromas on the nose are of strawberries and summer bush fruits with a hint of rose petal. On the palate, bright acidity with rhubarb and creamy strawberry. An all year rosé!

The grapes were fully ripened to maturity before being harvested, and the juice was given 24-hours of skin contact prior to pressing and a wild fermentation. The goal of this approach is to give the wine a deeper and wider palette of flavours and a dash of phenolic structure, providing greater potential for food and cheese pairings.
