TASTING NOTES
Bright, inviting aromas of blueberry and spice on the nose, preceptible tannins with a bright fresh acidity. A long and fruit driven finish follows a beautiful palate of blueberry, black cherry, hints of raspberry, as well as an earthy character and some stony minerality. Ready to enjoy now with an hour long decant.

Cava d'Onice is organically farmed and intentionally keeps its yields low to focus on quality. The soils are calcium clay sitting on top of limestone, adding minerality and structure to the wines.
Hand harvested fruit is pressed gently inert stainless steel and cement open top fermenters for 20 days, allowing for colour extraction and complexity. The wine undergoes malolactic conversion and is then transferred a combination of French and Slavonian oak barriques for 6 months, after which a further 6 months in bottle.
