Cirelli - Bianco Anfora (2018)
Made with 100% Pecorino, this wine displays lovely chamomile flowers, clay and steely minerality. It has a soft creaminess and a precise and well-balanced tannin structure. On the palate, it is beautifully acidic with an easy-going freshness with hints of spice and delicate fruit notes.
Harvested by hand, the grape are destemmed, gently pressed with a 24 hour maceration. Both the spontaneous fermentation with indigenous yeasts and 12 months aging are carried out in amphora. Minimal sulphur is added at bottling.
