TASTING NOTES
Dynamic palate of both sweet and sour cherry, gun smoke, baking spices, black pepper, a touch of cherry cola and cranberry. Fragrant, refreshing and a really silky core that is framed by grippy tannins.

From clay/iron soils at an elevation of 320m, this wine was fermented in open fermenters and hand plunged. 1/3 whole bunch for some added carbonic complexity and texture. Alcoholic and malo ferments were spontaneous with indigenous yeast/bacteria. Kept on skins for a period of 12 days. Pressed to french oak
puncheons (1/3 new) and aged in barrel for a period of 7 months.
