Romaric Chavy is the young, driven seventh generation winemaker in charge of Domaine Chavy-Chouet. Thanks to a marriage a few generations ago between a Chavy from Meursault and a Chouet from Puligny-Montrachet, this 15-hectare domaine has phenomenal vineyard holdings in both of these prime villages.
After gaining experience making wine overseas, Romaric took over his family's estate from his father at just 22. While Romaric hit the ground running, making excellent wines from the beginning with some advice from his father, in recent years he has developed a truly special touch in the vineyards and cellar, and the wines just keep getting better. He takes a minimal intervention approach in the cellar: a slow pressing with overnight settling of the juice and natural fermentation, before 12 months of aging in barrels (25-30% new) with no stirring of the lees, and further aging in tank. Young and fresh, the wines show an invigorating mineral intensity, adding layers of generous texture and fruit with time in bottle.
In our view, Romaric has placed Chavy-Chouet among the elite of white Burgundy domaines, and judging by the outstanding reviews and attention these wines are getting in the wine press, others seem to agree!
