TASTING NOTES

Energetic, precise and profound with white blossoms, citrus, wet stone and a chalky texture. Almost baked yellow apples here with an endless finish. A lot of tension between its fairly acidity frame and the plusher fruit...all with the textbook flinty, gun smoke that provides a subtle undertone. A classic Chablis. 

The fifth generation of Duplessis winemakers, Lilian, leads the wine estate. Concerned about the good health of the soil and climatic issues, he now only works in organic production on 10 ha. The vines are divided into about twenty plots of up to 75 years.

Vinifications are carried out in stainless steel vats with indigenous yeasts and age for between 12-15 months before being racked and put in barrels for 6 months.
