Doquet - Arpege, 1er Cru Blanc de Blanc Zero Dosage, Champagne
From three different premier cru terroirs – Vertus, Mont Aimee and Villeneuve, this wine has structure and a savoury mouthfeel. The Mont Aimee in particular is somewhat rare in Champagne with a high silex content, similar to many of the soils in Sancerre, providing much cooler conditions than the other sites. The wines from this portion of the blend provide a real austerity and smokiness.
With Chardonnay and some Pinot Noir spread over 5 hectares in the Côte des Blancs, 1.67 hectares in the Grand Cru locations of Mesnil-sur-Oger (very chalky soils), 2 hectares in Vertus and Bergères- les-Vertus (deeper soils with a higher proportion of clay), 1.2 hectares on Le Mont Aimé (yellow chalk, flint and sand) and about 3.5 hectares in Bassuet and Bassu (gray clay and chalk).
1/3 of the wines mature in oak. Before bottling, the wines are lightly filtered, but neither fined nor macerated cold. After the second fermentation, the wines mature on the yeast for a relatively long time compared to other winegrowers.
