Grapes are harvested by hand in small crates, and pressed gently. Fermentation happens by means of indigenous yeasts (pied de cuve) and in 100L stainless steel tanks. Malolactic conversion is allowed. Wines spend an extended time in tank on fine lees, with infrequent lees stirring. Wines are generally unfiltered (Filippi uses cold settling to clarify his wines naturally); sulphite additions at any point in the winemaking process are minimal.
Filippi estate stands out as one of the great specialists of Soaves, the famous Veneto appellation exclusively dedicated to white wines. Subtlety fruity and floral, this cuvee comes from old vines of Garganega grown in altitude in traditional ways using pergolas. The wine is left in contact with lees during a long period to give it more complexity.
Filippi's vineyards are planted at fairly high elevation (for Soave) with vines trained in pergola, a traditional training system that hangs fruit under a canopy of vine leaves.
He was the first in Soave to be certified organic in 2007, and followed then with biodynamic certification. Sitting at the summit of Monte Calprea, an ancient volcano, one of many that make up Soave’s highest peaks and its most treasured vineyard soils which Filippi wants to be felt in his wines. The Castelcerino vineyard is on clay and limestone with black basalt.
