TASTING NOTES
So pure, elegant and structured with tight angles - a fantastic example of Ontario Gamay. Big black and blue fruit notes with some chili powder and black pepper driving a nice spicy finish.

One of the superstars of biodynamic winemaking in Ontario - and recently recognized with awards from the world's leading wine magazine, Decanter and named as Canada's best winery in 2023, Hidden Bench make gloriously textured wines.
The grapes were handpicked, hand sorted and 10% gently whole bunch pressed. The juice was then left to settle prior to racking and transferred to stainless steal. Fermentation then occurred naturally with indigenous yeasts. Bottled with 50ppm sulphites.
