Honey, buckwheat, lanolin and green apples and lush pears. Characteristic for the producer, there is subtle and well integrated volatile acidity which provides a beautiful aromatic lift. Very elegant with the variety's naturally high acidity tucked in and, somewhat, tamed by the generous fruit.

Organic since 1998 and biodynamic since 2010, T vineyards are on a band of green chalk in the Lieu-dit de l’Enchentoir. Vines of 16 years are pruned in cordon de royat.
Grapes are pressed for 4 hours with settling and then the fermentation in concrete tanks from November to May. No sulphites are added during the vinification with a low amount (generally under 30ppm) added at bottling.
On the hill of Puy Notre Dame, a majestic collegiate eleventh century overlooks the vineyard. Le Manoir de la Tête Rouge was built in 1649 at the foot of the hill with the current owners accruing it in 1995 with 10 hectares of vineyards.
