Wine #1

Cascina Degli Ulivi - Filagnotti, (2012)

100%, TEN YEAR-OLD Cortese. Mature and in a perfect moment of drinking pleasure; tertiary notes of mushroom, hay, roasted almonds and earth clearly evoke this wine's age - but it still demonstrates ample freshness with its lively, precise acidity, lifted floral notes and cough syrup.

The 60 year-old vines come from an estate called Filagnotti located near the town of Tassarolo, just north of Gavi in Piemonte. Soils consist of ferrous clay and face the southwest. Destemmed and gently pressed for over 24 hours, fermented in 25 hectolitre acacia casks and 12-months ageing in these plus one further year in cement tanks.

Sadly winemaker Steffano Bellotti passed away at the age of 59 in 2018. He passed his knowledge on to countless young winemakers and headed numerous organizations with the aim of promoting Piemonte wines and natural techniques.

Raul Perez - Ultreia de Valtuille, Bierzo, Spain (2019)

This is exactly the kind of wine that led the UK's premier wine publication, Decanter magazine to muse whether Perez is the best winemaker in the world.

An explosive nose with floral violet tones as well as licorice and red fruit with an earthy undertone. Firm in the mouth, but very nicely balanced with evident freshness. This single vineyard expression of Mencia amply demonstrates the grape's complexities. At once fresh but earthy, silky yet a touch wild. The kind of wine that stops you in your tracks before you realize just how fun and drinkable it is.

Named after the road (Ultreia) that runs from Bierzo towards Santiago de Compostela. Originating from one plot of 1.1 ha, planted in 1908 at an altitude of 530 m. The entire bunches undergo maceration and fermentation in large foudres for 90 days. Then élevage for 12 months in French oak barrels.


Wine #3

Petrolo - Boggina C (2016)

Petrolo is a cult winery and with records from hundreds of years ago demonstrating it was one of the first Italian estates to plant French varieties. The Valdarno di Sopra denomination dates back to the days of the Medici family during the Renaissance and the Bòggina vineyard is a celebrated Sangiovese cru. 

A classic Sangiovese bouquet of pronounced forest fruit, spice, leather, and earthy tones. This is such a vibrant wine with serious minerality, counter-balanced by rich fruits and a sense of iron and tobacco on the palate. Fermented in concrete vats using ambient yeasts with extended maceration times coaxing out depth, hefty tannin structure and then aged in French 40-hectoliter casks and tonneaux for 18 months.


All three wines are biodynamic, harvested by hand with zero to minimal sulphur used in the winery and vegan. These are precise, clean and elegant wines that are not available in-store.
