Pearl Morissette - Fougue, Chardonnay, Niagara (2021)

 TASTING NOTES

Supple, lush and tender; lush fruit, herbaceous with tender salinity. A dry medium bodied wine, that is whole pressed and fermented in concrete for 8 months. Lifted with humming acidity, it is supple with notes of wet wool, bruised fruits and almonds.

2021 Fougue is 100% Chardonnay from the high density, 'Home Farm' vineyard in Creek Shores Appellation. The fruit was harvested on September 25th, 2021 and after careful sorting, it entered the press as 100% whole clusters. Fermentation proceeded steadily in 100% concrete vessels and completed by mid December 2021. The wine aged in its fermentation vessels on primary lees for a total of 8 months.
