This golden sour wheat beer was inoculated in the fashion of Lambics. After boiling with aged hops, the wort was transferred to a shallow tank to cool overnight in a nearby vineyard to allow the wild yeasts and bacteria in the air to float down and begin the spontaneous fermentation.
The two barrels were left to age for 18 months before bottling and naturally carbonating.
