TASTING NOTES
Aromas of pear, yellow apple, shaved fennel, and fresh sage. Ripe yet still fresh on the palate, the wine shows green and yellow orchard fruits with zesty acidity and a persistent undercurrent of saline minerals. Lemon, yellow apple, fresh apricot, and yellow plum fruit, salty calcareous minerals, rubbed sage, and fresh peat linger on wine’s long finish.

100% Pecorino grown in vineyards sitting at 300 metres above sea level. The soil in the vineyards is ‘San Lazzaro’, a medium textured clay-sand, medium textured lava-clay.
Vines are cane pruned with 3,500 plants per ha and yield is just 55hl-ha. Grapes are hand-picked in late August and destemmed before undergoing a short (12-24 hours) period of cold maceration under a blanket of nitrogen (no sulfur).
After crushing, the juice undergoes a cool ferment for 20-25 days in stainless steel. An additional 6 months aging in concrete tanks on the fine lees helps to give body and mouthfeel.
