A really vibrant pet nat, at once tangy and creamy. Tart lime, yeasty biscuits and pie crust. Bracing acidity with a long finish. Spontaneous fermentation five days on the skin. Five months aging in used Burgundy barriques. Nice reduction and flint stone. Clear structure, depth, complexity and harmony.
100% Hárslevelű (one of the three main grapes used in the famed Tokaji sweet wines and rarely seen on its own). This pet nat sees 5 days skin maceration and over 18 months in bottle.
Founded 1998 by Horst Hummel and located about 2 hours south-west of Budapest, the winery has been organic since 2008 and using biodynamic preparations since 2015. Spontaneous fermentation only, no fining, no filtration. No added sulphur.
