Windrush - Pinot Noir, Hockley Valley, Ontario (2018)

TASTING NOTES

A balanced and graceful pinot with hints of soft violet lead into bright berry are supported by firm tannins and savoury oak notes.

Processed at the Windrush Estate Winery from grapes grown in Niagara-on-the-Lake at the award-winning Glen Elgin Vineyard. Hand-harvested, destemmed and crushed before transfer into stainless tanks for temperature-controlled fermentation. To bring out tannin and colour, there was a 5-day cold soak prior to ferment. During its time in tank, the must was pumped over to mix the skins with juice.
