TASTING NOTES

A Lambrusco-esque, sparkling red wine - juicy, refreshing and perfect for the long summer evenings. An electric palate of strawberry bubblegum, slightly medicinal notes and watermelon, chalky texture and buzzing acidity. 

Wonder Werk is a newer project between high school friends Issamu Kamide and Andrew Lardy. Based in Los Angeles (Echo Park!) they source organic and biodynamic grapes from all over California...in this case, the Siletto Family Vineyards - a collection of three parcels in Tres Pinos and Paicines, CA in San Benito County near Hollister. The site is characterized by gravelly soils and serious diurnal temperature shifts.

The freisa grapes were picked early on September 12 - nearly a month earlier than usually - and the whole clusters underwent 2 weeks of carbonic maceration before being pressed to tank and fermented dry by native yeast and bacteria.

No sulfur or other additions were added and this wine was bottled without fining, filtration, or disgorgement.
