Herbert and Carmen Zillinger use no pesticides, no additives, no fining agents, just time. Or as Herbert would say, "time to mature".
Herbert Zillinger took over his parents' winery in the Weinviertel in Ebenthal when he was just 20 years old. When his wife Carmen joined the company in 2005 and since 2016, the Zillingers have been working according to biodynamic guidelines, certified with the "Respect Biodynamic" label.
As is typical in the Weinviertel, Herbert and Carmen's most important grape variety is Grüner Veltliner. But Traminer, Sauvignon Blanc and Zweigelt are also skilfully processed into fine wines.
