TASTING NOTES

Spontaneous and complex. Overripe stone fruit, lemon juice, dry tall grass, apple cider vinegar, white pepper, light cracker, with a full, pleasant carbonation. 

Blended and bottled on Wednesday March 11th 2020, then aged for an additional four years before release.

It is a blend of one-, two- and three-year-old lambics, originating from five different barrels and six different brews. The oldest was brewed in April 2017.

At release, the weighted average age of this blend had reached 67 months, or more than five and a half years. A true gueuze, purely natural. Fully spontaneously fermented from brew to bottle. Unfiltered. Unpasteurised.
