TASTING NOTES
A totally different expression of Cab! Smooth, juicy and a little earthy-funk. Super ripe, juicy bowl of summer berry fruits with basil leaves. The pronounced aromatics lead to melt-in-your mouth softness, with tannins that frame the wine, but do not come across at all assertively, they just provide a touch of grip. Really long finish.

After hand-harvesting, the clusters were fermented in concrete vessels with some carbonic maceration over the course of nine days. The fermentation then continued with pump overs and destemming over the course of 24 days to provide more structure. Finally, the wine was aged in 2000L concrete and 500L amphora for ten months.
Big Head is a reference point for innovation and stylish winemaking in the Niagara region. The RAW label wines are all concrete fermented and aged, with absolutely no oak. They are wild fermented, whole cluster pressed and unfiltered.
