TASTING NOTES
Baby vin Jaune!
50% Chardonnay and 50% Savagnin hand-harvested, fermented in stainless steel and transferred to old 225L barrels for 30 months under a veil of yeast. Bottled with a small amount of sulphur.
Nuts, preserved lemon, lime, dried stone fruits and iodine. Very good balance between rich fruit and austerity with salinity.

Fabrice and Valérie of Champ Divin are careful, precise and methodical people, both of them former engineers with backgrounds in agronomy and earth sciences. After having spent extensive time working to develop sustainable farming practices in Africa and then helping growers in the Loire develop organic and naturally balanced vineyards for 8 years, they decided (in 2008) to procure vineyards in South-Revermont, in the “premier plateau” of Jura.
