Three friends founded Azienda Agricola COS, in 1980: Giambattista Cilia, Cirino Strano and Giusto Occhipinti, their last names providing the acronym for the name for the winery – COS.
With limestone substrates under 1-2 feet of red clay, COS works organically and biodynamically in order to support the health of the soil. In fact, they have never used any synthetic or chemical additives in the vineyard since the outset in 1980.
Nero d'Avola 60% & Frappato 40%, vinified in cement tanks and aged for 12-months in oak tonneaux. A small addition of sulfur is only added at bottling.
