TASTING NOTES

A salty 50/50 blend of Grecanico and Insolia. Fermented with wild yeasts in concrete tanks, this skin contact white offers intriguing aromas of dried Mediterranean herb, sea breeze, candied citrus zest and wild flower. The savory, mineral-driven palate offers figs, nectarine, dried apricot, saline, sage and baking spice while a honey note wraps around the finish.

Three friends founded Azienda Agricola COS, in 1980: Giambattista Cilia, Cirino Strano and Giusto Occhipinti, their last names providing the acronym for the name for the winery – COS.

With limestone substrates under 1-2 feet of red clay, COS works organically and biodynamically in order to support the health of the soil. In fact, they have never used any synthetic or chemical additives in the vineyard since the outset in 1980.

Using a combination of 440-liter clay amphorae with a collection of large neutral Botti and concrete tanks. A small addition of sulfur is only added at bottling.
