TASTING NOTES

Citrusy and herbaceous- loads of fresh acidity with lime cordial and mint.

The fruit was de-stemmed then pressed to tank for a slow natural ferment and left on solids for 6 months to flesh it out. Finished with a small sulphur addition prior to bottling. 

Das Juice is a project started by Lo-Fi Wines, an Australian-based fellow importer and distributor. Behind the brand are Tom Sheer and James Audas, sommeliers with extensive experience in the wine industry, including at Noma in Copenhagen.

With a strong commitment to sustainability in the vineyard, a focus on low-intervention in the cellar and a passion for good drinking in the glass, their ultimate next step was to launch their own line of wines. After a couple of years of testing, and with help from winemakers across Australia, Tom and James launched a complete range from sparkling to red this vintage.

The resulting wines are made with as little tinkering as possible; all wines are fermented naturally and spend 5-6 months on solids in tank, without any pumping or punching to respect the grapes. All wines remain unfiltered and unfined, with just a small dose of sulphur at bottling as the only addition.
