10 to 30 years old Vines are on plots of degraded slate, Quartz & clay. 100% destemmed and soft grape pressing. Fermentation in stainless steel tanks and rested with its lees for 5 - 6 months.
Dominio del Urogallo is a small estate in Asturias, on Spain’s northern coast by wine pioneer Francisco Asencio. He also makes wine in Bierzo and in the Sherry Triangle.
Ascencio farms organically with biodynamic treatments and focuses on the local grape varieties of the region. The vines are some of the oldest in Asturias and wine culture has been around for thousands of years. Because of the region’s high elevation and cold climate, reaching maturity can be tricky but Francisco likes a challenge and his passion and determination shines through in his wines.
Minimal intervention, indigenous yeast & bacteria, and no added sulfites.
