TASTING NOTES

A natty feeling wine with its buzzing acidity and tension between crunchy fruit, rustic tannins and a smoother core. Aromas of red berries, violets, garrigue and rusty iron. This ends with a surprisingly fresh finish.

After two to three days of cold maceration, 2 weeks of spontaneous fermentation with native yeasts follow. The extraction of the coloring matter and tannins is managed by frequent but delicate pumping over. After racking, the wine from each plot will be aged separately from the others in vats or barrels of 2 wines. The assembly and bottling are done after 18 months of aging in stainless steel vats and in barrels.

Dominique and Solenn come from the East of France. The Château Giscours group entrusted them with the management of its Caiarossa property in Tuscany in the 2000s.

Mas Llossanes is an 11 hectare high altitude vineyard, reaching up to 700 meters, it is one of the highest estates in France. It is located in the sunniest region of the country: Roussillon. The vines were born in the 1940s, they take root on granite arenaceous and schist soils. The vines are between 40 and 80 years old, six native grape varieties make up the estate's mosaic: Carignan, Grenache, Syrah, Chenanson, Cinsault and Chasan.
