TASTING NOTES
From volcanic soils, this wine packs a lot of power with notes of smoke and iron, green apple, fennel, and honey. A fairly full bodied wine that displays notable strength, layers and bright acidity.

The Sisters of the Cistercian order (Monastero Suore Cistercensi) in Lazio have gained a cult following and growing grapes on the monastery grounds since the 1990s. Their wines became even more special when winemaker Paolo Bea started advising them in the early 2000s.
Farmed organically on five hectares in the town Vitorchiano, about an hour north of Rome. The grapes are harvested together and allowed to spontaneously ferment using indigenous yeasts.
