From volcanic soils, this wine packs a lot of power with apricot jam, white pepper, grapefruit rind, and gunflint frame a concentrated, almost oily-textured palate, and a zesty acidity contributes to the wine’s overarching sense of approachability.

The Sisters of the Cistercian order (Monastero Suore Cistercensi) in Lazio have gained a cult following and growing grapes on the monastery grounds since the 1990s. Their wines became even more special when winemaker Paolo Bea started advising them in the early 2000s.
Farmed organically on five hectares in the town Vitorchiano, about an hour north of Rome. The grapes are harvested together and allowed to spontaneously ferment using indigenous yeasts. two weeks in contact with the skins, 350 cases per year.
