TASTING NOTES

A fine and elegant rosé with delicate flavours of strawberries, raspberries and pomegranate. Lovely structure from some grainy tannins alongside a herbal notes and savoury, with minerality across a fairly long finish.

100% sangiovese, sustainably farmed from vines planted in 2004 with guyot training system, east/south-east exposure, white clay and limestone soils. 6,500 plants/hectare with a production of 1,5 kg of grapes per plant (95 quintals/hectare) - hand-picked in the first week of September.

The grapes were gently destemmed and pressed, the skin maceration lasting 3/4 hours and the fermentation takes place with wild yeast in stainless steel tank, where temperatures were strictly controlled. 6 months in stainless steel tank in contact with the fine lees, no malolactic conversion.

Located near the medieval hilltop town of Todi (in the very middle of Italy – halfway between Florence and Rome, and smack-dab between both coasts), Roccafiore was founded in 2000 by Leonardo Baccarelli as an organic farm, restaurant & inn. In the rolling hills surrounding Todi, it’s an innovative project. The pioneering 15 hectare vineyard is planted to Grechetto di Todi, Trebbiano Spoletino, Sangiovese, Montepulciano & Sagrantino.

With a gravity-flow winery, solar installation that supplies the electricity needs of the entire estate, and tractors that run on biodiesel...Roccafiore aims for eco-conscious farming as well as great wine.
