TASTING NOTES
Sun-kissed peaches, creamy lemon and a dash of spice & ginger. The palate has beautiful weight from the Viognier which is balanced with a touch of tannins and acidity from the Chardonnay. Fun and quite complex at the same time!

A blend of 80% Viognier from Grimsby Hillside and 20% Chardonnay from our farm.
Chardonnay was hand de-stemmed and fermented in-field. Punched down twice daily for a quick, hot ferment. Pressed and aged in glass demijohns for 10 months.
Viognier was whole-cluster pressed after one day of maceration. Put to neutral barrels on original lees for 10 months.
Wild ferment, bottled unfined and unfiltered with 22ppm S02.
