TASTING NOTES

Lemons, chamomile, honey, smoke and a touch of minerality. This has a lively and crisp character that is dry, tannic, fresh & tasty. 

The grape must is spontaneous fermented with maceration on skins for 5 days, followed by gentle pressing and maturation in oak barrels for 12 months on fine lees.

The estate began in 1928 in Vrhpolje in the Vipava Valley, at the foothills of Nanos and Kovk. In the past, sea deposited rich layers of flysch and marl. Open to the Adriatic at the western end and with a cold mountain wind from the north - it is affected by the strong, 200km/h Burja winds only local grape varieties like Zelen that are perfectly adapted to the harsh environment can survive.
