TASTING NOTES
Floral, fruity and earthy notes. The wine is very dry and textured with dusty salinity, vibrant fruits and a little aromatic blast of its volcanic origins.

Pre-fermentative oxidation. Not controlled-temperature fermentation. from a cordón trenzado plot of vines in the western part of the Orotava Valley on sandy, silty and basalt soils. The juice from the pressing with part of the stems was let to settle and fermented with indigenous yeasts in concrete, where the wine matured with static lees (not stirred) for nine months.
Juan Jesús, who is a 4th generation winemaker, founded Viñátigo in 1990 and has worked tirelessly since then identifying, recuperating the native grapes of the Canary Islands. The grape Listán Blanco de Canarias was brought to the Canary Islands in the 18th century by the Andalusian conquers. Viñátigo cultivates it in the high-lands that sit at 500 meters of altitude.
Traditional vineyards cultivated in trellis, a viticultural system imported by the Portuguese colonizing influence in the area. The Icod valley was buried by various geologically recent volcanic eruptions that generated a very stony and sandy terroir, where the roots of the vines have the capacity to easily penetrate deep, giving its wines tension, acidity and freshness. The Paraje de La Peña, at about 450 meters above sea level, is directly influenced by the trade winds.
